I have to throw this in because I mentioned in my first posting how we are interested in the organics. We've started to make changes in our diets and the below photo is a pretty big example of this. For dinner this evening we had a Dinosaur Salad, homemade vegan sour cream, homemade hummus, and store bought chips and hot sauce (our ultimate downfall...Texans and their chips/hot sauce). I don't know what was going on with the Peperoncini...just hanging out I guess. My hubby and I dug right in. The boy was a little more timid but bribing him with chips had his plate empty in no time!
Dinosaur Salad (Hubby made it. His comments- "only took 15 minutes")
Lacinato Kale (it's very tough looking stuff), lemon juice, bean sprouts, and baby spinach. Avocado on top and onions if you want them. No salad dressing or any oils. It was very good.

I really like her sight and this was the first thing I made with my new toy, the food processor!
Recipe for the homemade hummus came from the Engine 2 Diet. We watch lots of documentaries, one being Forks over Knives.
